Perfect Pancakes


Here’s a recipe that I like to make on a Saturday or Sunday morning, when we have time to relax.  You can add blueberries, but don’t mix them in with the batter, it will turn blue!  Instead, place berries on the pancake right after you put the batter in the pan.


  • 1 1/2 cup flour
  • 1/2 Tbsp baking powder
  • dash salt
  • 3 Tbsp honey
  • 1 egg
  • 1 1/4 cups milk
  • 3 Tbsp melted butter or oil
  • maple syrup and butter to serve

Mix all ingredients in a large bowl.  Add more milk if needed.  Use a 1/4 cup measuring spoon or cup to pour the batter into a pre-heated pan.  Cook on medium low until the bubbles on the pancake form and start to pop, then flip.  To keep warm, put pancakes on a baking sheet in a warm oven.  Serve with warmed maple syrup and butter.
