Baby Back Ribs
1 rack of ribs, cut in half so they can fit in a Dutch oven
spices to taste for rub: chile powder, paprika, ground mustard, cumin, black pepper, garlic powder, brown sugar/honey/maple syrup
1/2 a bottle of Annie’s Naturals Smoky Maple BBQ Sauce
Pull the membrane off the concave side of the ribs. This will help them to fall off the bone better, and also make them easier to eat. Next, rub the ribs with your spices. If you have time, slice a lemon, lay the slices on the ribs over the spice mixture (to tenderize), cover and place in the refridgerator for 24 hours. If you don’t have time, squeeze the lemon juice over the ribs and rub in with the spices. Be sure to pick out seeds.
Remove the lemon slices, if needed, and pour on the BBQ sauce and some honey or maple syrup if desired. Place covered in the oven for 2 1/2 to 3 hours at 325 F. Remove the cover, increase the temperature to 375 F and bake another 30 minutes. You can grill them at this point if you want. Slice into pieces and serve with extra sauce.
