What’s for Supper?

Last night we had our good friends Alicia and Vinny over for supper.  I made a new salmon recipe, and it was just delicious and paired so well with the beautiful spring weather we had yesterday!

Mustard Herb Sauce

Make this sauce earlier in the day and keep it in the refridgerator.  The flavor gets better with time.

Ingredients:

  • 1 cup sour cream
  • juice of 1 lemon
  • 2 tsp whole grain mustard
  • 1 tsp dijon mustard
  • 1/2 cup chopped chives
  • 2 Tbsp chopped tarragon leaves
  • coarsely chopped shallot
  • salt and pepper

Mix all ingredients in food processor.  Serve with Mustard Glazed Salmon.

Mustard Glazed Salmon

Ingredients:

  • whole salmon fillet with skin, cut into 4-8 pieces depending on size
  • 2 garlic cloves
  • juice of 1 lemon
  • 1 Tbsp finely chopped chives
  • 2 Tbsp olive oil
  • 2 Tbsp whole grain mustard
  • 2 Tbsp dijon mustard
  • Salt and Pepper to taste

Preheat oven to 400 F.  Arrange salmon on a baking sheet.  Blend all other ingredients in a food processor until finely ground.  Brush glaze onto the salmon, and bake for 7 minutes.  Broil for 2-4 minutes until the glaze is browned but not burned.  Serve with Mustard Herb Sauce and lemon slices.
