Cranberry Applesauce Nut Bread

This quick bread is best made with homemade unsweetened chunky applesauce and fresh cranberries.  You can leave the cranberries out if you would like.

  • 1/2 cup shortening
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup applesauce
  • 3/4 cup chopped walnuts
  • 3/4 cup cranberries

Preheat oven to 350°F and butter or spray a loaf pan.  Cream shortening and sugar, then mix in eggs and vanilla.  Add flour, salt, baking powder, baking soda, cinnamon and nutmeg, and blend well.  Add applesauce.  Stir in nuts and cranberries.  Pour into pan and bake for 55-60 minutes.

  1. Yum, that looks great. I have apples that are only good for sauce at this point and I got some cranberries over the weekend. Looks like something tasty for tomorrow’s breakfast…or for snacking on while watching election results. 😉

  2. This looks good. Do you think this one is easy enough for a group of toddlers to bake?

  3. I’m not sure… I used the stand mixer to cream the shortening and sugar. It would be tough to do it by hand, especially for toddlers. But I have no experience baking with little helpers!
