Breakfast for Supper from Scratch

I like to make breakfast for supper on cold nights or so I can avoid going to the grocery store.  Blueberry pancakes are great for supper, but I also like eggs.  I decided to make sausage, egg and cheese biscuits and home fries for this breakfast for supper.  Everything was made from scratch and it was warm, filling and yummy.

Sausage, Egg and Cheese Biscuits

  • 4 large sausage patties (we used the sausage from our pigs)
  • 4 eggs
  • 4 slices cheddar cheese
  • 4 baking powder biscuits (recipe follows)
  • salt and pepper to taste

Form and cook the sausage patties by browning in a pan on each side until cooked through.  Scramble an egg with salt and pepper, then pour into a hot pan coated with cooking spray.  Don’t stir the egg, but cook it like a fried egg by letting it set and then flipping it.  Repeat for each egg.  Assemble the sandwiches by placing the egg, slice of cheese, and sausage on the biscuit.

Baking Powder Biscuits

  • 2 cups flour
  • 1/2 tsp salt
  • 4 tsp baking powder
  • 1 Tbsp sugar
  • 1/2 cup butter
  • 2/3 cup milk

Preheat oven to 400°F.  Mix the dry ingredients in a bowl.  Add the butter and blend into the flour using your fingers or a pastry blender.  Add the milk, mix the dough and knead until it comes together.  Form 4 large biscuits, place on a greased baking sheet and bake for 20-25 minutes until beginning to brown on the top.  You can also make 8 smaller biscuits, and bake for 15-20 minutes.

Home Fries

  • 4 baking potatoes
  • 1 medium onion
  • 1 Tbsp butter
  • salt and pepper to taste

Bake potatoes in the oven or in the microwave and let cool.  Peel the potatoes and cut them into large chunks.  In a large skillet, melt the butter and cook the onions until transparent.  Add the potatoes, and cook until browned on all sides, stirring occasionally, about 10-15 minutes.
