Coffee Cake with Crumb Topping



  • 1 stick softened butter
  • 3/4 cup sugar
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 large egg
  • 2 tsp vanilla
  • 1/2 cup milk
  • 1/2 cup sour cream

Crumb Topping

  • 1 cup flour
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 stick softened butter

Preheat the oven to 350°F.  Butter a springform pan or baking dish using the butter wrapper and then coat with flour.  Cream butter and sugar on medium speed in a stand mixer.  In a bowl, combine flour, baking powder, salt and cinnamon.  Add the egg and vanilla to the butter and sugar mixture, then alternately add the flour mixture and milk in small amounts.  Blend in the sour cream, and pour it into the pan.  Make the crumb topping by combining all ingredients with your fingers, then spread on top of the coffee cake batter.  Bake for about 1 hour, until a toothpick comes out clean.  Cool, then remove the sides of the pan and serve.
