Plans and Menu for the week of 6/25

It’s the first full week of summer vacation! My goals for this week are to catch up on housework that’s fallen behind in the final weeks of school, play with the kids, can strawberry jam and keep working on my coursework. I haven’t blogged about it, but I’ve gone back to school to take some grad level classes in physics and earth science. I already have my masters but I love learning science! Anyway, here’s my plan for the week in terms of catching up on housework. I’ll do a little bit each day, in addition to daily stuff like dishes, running laundry and cooking. I like having a daily focus, and will try to get in a set schedule for the summer once I catch up a bit.

M- work in garden, laundry day, pick up kitchen, pick up mud room, grocery delivery

T- clean bathrooms

W- garden day

Th- clean office

F- vacuum upstairs

S- wash bedding (weather permitting)

S- laundry day

And here’s the supper menu for the week:

M- salmon, red potatoes, corn on the cob, salad

T- flank steak fajita bowls

W- going to a friend’s house and bringing pasta salad, broccoli salad and brownies

Th- grilled chicken, sweet potatoes, , zucchini, salad

F- baked ziti, salad

Sat- heading to an engagement party for my cousin

Sun- crock pot pulled pork, baked potatoes, salad

Menu for the week of 5/7

Busy week ahead with baseball games on Wednesday and Friday nights and my big field trip on Friday, too. And Mother’s Day!

M – steak, sweet potatoes, green beans

T – turkey rubens, hot dogs for the kids, onion rings, salad

W – picnic: sandwiches at baseball game

Th – hamburgers, sweet potato fries, yellow squash, salad

F – ???? Crazy night. Concession stand food or cook when we get home?

S – BBQ chicken legs, macaroni and cheese, broccoli

S – leftovers from Mother’s Day brunch that we are hosting

Menu for the week of 4/2

Monday- Asian baked salmon, mashed sweet potatoes, broccoli, pineapple

Tuesday- burgers, baby carrots and cukes with hummus, salad

Wednesday- homemade hamburger helper, green beans, salad

Thursday- chicken bog, carrots, salad

Friday- homemade pizza, salad

Saturday- pork chops, red potatoes, green beans, salad

Sunday- breakfast for dinner- eggs, bacon, toast

What’s for Supper?

The biggest stress in my life doesn’t come from work.  I’ve been at my job for six years, and I know what I’m doing.  I’m confident that I can handle my responsibilities, and although sometimes I’m overwhelmed with my work, the majority of my stress comes from keeping the house clean and cooking.  While I love cooking, it’s figuring out what to make, shopping, and thawing food that’s the hard part.  Once I have all the ingredients ready to go, that’s the fun part.  I’m going to work on tackling the cooking stress and then I’ll deal with cleaning (since I enjoy cooking much more!)

Figuring out what to defrost seems to be the most difficult part.  It used to be that I’d shop once a week and then choose whatever meat looked good from the refrigerator.  Now, I need to plan ahead to get things thawed and ready to cook.  I think if I start to post a menu for the week, I’ll be more organized and won’t be in a panic to figure out what to defrost when I get home from work.  I don’t typically plan out a week’s worth of meals in advance, but it’s worth a try.

  • My award ceremony is tonight, so I’m not sure if we’re going to eat at home.  If we do, I think I’ll make eggs or pancakes.

  • We’re having friends over and I’m not sure what I’m making yet.
